Soaked Pancakes from Nourishing Traditions

Ingredients:

  • 2 cups freshly ground whole wheat pastry flour (or spelt, kamut flour)
  • 2 cups yogurt, buttermilk or kefir  (I used raw milk with 2 tsp of apple cider vinegar)
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 T melted butter

Preparation: Soak flour in yogurt (or buttermilk/kefir) in warm place for 12-24 hours.

After soaking time, add eggs, salt, baking soda, and melted butter.  Add water if necessary to obtain the desired thinness. Cook on a hot, oiled griddle or cast iron skillet.  Serve with melted butter, real grade B maple syrup, raw honey, berry syrup, or fruit butter.

NOTE:  When I first learned about soaking grains, I was nervous.  Leaving grains out with milk overnight?  It sounded like a quick invite for food poisoning.  After many hours of research and many more food experiments, I am a believer.  Soaking grains allows a natural fermentation to occur that increases the absorption of nutrients.  To learn more, check out Whats the Fuss About Soaking Grains by The Nourishing Gourmet.

Easter Baskets {healthy and practical} Are Here.

I finished putting together my kid’s Easter baskets this morning, and I am pretty excited how they turned out.  Our baskets or buckets this year were found in the outside toy section at Target for $1.99 each.  At the bottom of the bucket there is a new bag of ankle socks topped with a large handful of Easter grass.  A pair of flip flops with a flashlight, granola bars, and fruit ropes complete the basket perfectly.  Hopefully a pair of swim goggles will make their way in before the big day.

I plan to fill Easter Eggs with printable jokes from the internet, health food store candy, and clementines – three of our favorite things.

Some other fun and sugar free Easter basket ideas may include:

Sugar Free Christmas Advent Calendar for Kids

Our Christmas tree emerged from the garage early this year, and is spreading magic throughout our house.  I love the opportunity Christmas provides to celebrate loved ones and the miracle of life.  The kids and I love to celebrate with our own sugar-free Christmas advent calendar (inspired from here) that makes the book-lover in me very happy.  Over the years, we have collected a variety of Christmas books and movies and I keep them hidden throughout the year to maintain their specialness.

Around the end of November, the books and movies are wrapped and nestled under the tree waiting their turn to be opened.  The kids then take a turn opening one present (book or movie) each day until Christmas Eve when there are no more presents to unwrap.  I love this tradition because it forces me to carve time out of our busy holiday schedule to nestle around the Christmas tree with my children reading and watching movies together.  I love that it allows me to connect the story and the meaning and the joy of the season.

Because that is what Christmas is really about.

And while we are on the topic… have I ever told you about our very first Christmas tree spine?

 

A Chiropractic Christmas

 

Newly wed students with no income to brag about, we chose to spend our first Christmas together nestled around a multi-colored spine.  Because Christmas – as we learn from the Grinch – doesn’t come from the store.  Christmas lives in our hearts… and that means so much more!

Gluten Free Snacks

Hi Friends! It has been a very long time since I have posted anything new on this blog and I apologize for the silence. Our family had quite the summer due to a lost pregnancy followed by a scary accident in the kitchen. Needless to say, I will never be creating or cutting an ice cream cake ever again. In fact, I am pretty sure that I will never be allowed to touch anything sharper than a butter knife in the near future.

And I am perfectly okay with that.

As long as I am permitted to operate my vitamix, life will go on.

Luckily, one of our favorite snacks doesn’t require anything sharper than a butter knife… and it is super easy to make. My six-year-old has claimed bragging rights to this snack because his creations always taste better than mine. And that my friends, is motherhood victory at it’s very best.

So, let’s get cooking!

 

Cinnamon Almond Butter Banana Rice Cakes

Ingredients:

  • Rice cakes (organic when possible)
  • Almond butter
  • Bananas
  • Cinnamon

Slice banana into thin round wedges and set aside.  Carefully spread a thick layer of almond butter on top of a rice cake.  Top with bananas and a generous sprinkle of cinnamon.  Rice cakes never tastes so good.

 

Vegan Strawberry Apple Butter

Life is always worth celebrating… especially when jars of strawberry-apple butter are in the refrigerator.

Strawberry Apple Butter

12 medium apples, unpeeled, cored and thinly sliced
3 tsp. ground cinnamon
1 tsp. teaspoon ground allspice
1/2 tsp. ground cloves
4-5 cups washed and pureed strawberries
1 tsp. liquid stevia

Toss apples, cinnamon, allspice, cloves, strawberry puree, and stevia into an oversized crock pot.  Bake on medium to high heat (for approximately four hours) until apples are soft.  Transfer apples and strawberries in small batches into a blender or vitamix.  Blend until smooth.  Store jam in the freezer or refrigerator in mason jars or specific freezer containers.  Tip:  Leave 4-6 inches of air space at the top of containers that will be placed in the freezer.

 

Strawberry Poppy Seed Salad

I am a salad girl.  Have you noticed?  I love fresh crisp salads topped with fruit, veggies, nuts, cheese, and a homemade dressing.  While I am pretty sure that I could survive on salads alone, I know for a fact that my kids could not.  The dressing that accompanies this salad is sweet, sweet enough for a three-year-old that recently begged me to “make this salad again.”

 

Strawberry Poppyseed Salad

  • Strawberries, mangoes, blueberries, etc.
  • Greens of your choice – we love a mixture of spinach, romaine, and green leaf lettuce.
  • Crushed nuts – almonds, walnuts, pistachios, and/or pecans are my favorite.
  • Cucumbers
  • Dried fruit –  unsweetened cranberries and coconut are some examples
  • Poppy seed dressing
  • Roasted chicken for the meat eater. (optional)
  • Feta cheese for the dairy lovers. (optional)

Wash and prepare your lettuce, berries, and cucumbers.  Toss ingredients together in a large bowl or assemble on individual plates.

Romano Rice and Beans

My mother-in-law gave me this recipe years ago.Easy to prepare and inexpensive, this dish greets our table on a regular basis. I usually do not have fresh parsley on hand and to substitute I sprinkle the dish with dried parsley. I hope you enjoy this dish as much as we do!

 

Romano Rice and Beans

2 cloves of garlic – minced
1 large onion – chopped
2-3 carrots – chopped
1 green pepper – chopped
1 stalk celery – chopped
1 Tbsp. olive oil
2/3 cup fresh parsley
2-3 tsp. dried basil
1 tsp. oregano leaves
3 large tomatoes – diced
1 can (or 2 cups) kidney beans
5 cups cooked wild/brown rice
Parmesan cheese – grated
Salt and pepper to taste

Drizzle oil into a large skillet.  On medium heat – combine garlic, onion, carrots, pepper, and celery.  Cook until tender.  Add parsley, basil, oregano, tomatoes, salt, pepper, and kidney beans.  Heat through.  Add brown rice and parmesan cheese.  Stir until cheese is melted.  Serve with additional cheese – if desired.

 

Omit cheese if vegan or on a dairy-free diet.

Gluten-Free Garlic Chicken Pizza

I did it.

I made gluten-free pizza and lived to tell the tale.  Skip the take-out, this pizza will rock your world.

To make your own gluten-free garlic chicken pizza, assemble the following ingredients:

  • 1/2 cup of diced tomatoes
  • 1/4 cup green onions
  • 1-2 cups all-natural cheddar cheese
  • 1 bottle of sugar-free marina sauce (about 2 cups)
  • 1 recipe of garlic chicken
  • sore bought gluten-free crust

Preheat oven to 450 degrees.  If necessary, roll out your dough onto an oiled surface.  Begin dressing your crust with a layer of marina sauce.  Sprinkle cheese, chicken, onions, and tomatoes onto the marinara sauce.  Bake the pizza until the crust is slightly browned and the cheese is bubbly.

 

Garlic Chicken

You might notice from the recipes posted on this blog that we are not big meat eaters.  After two years of experimental veganism, we have slowly began to incorporate small amounts of meat and cheese into our diets once again…. but that is another story.

When purchasing meat, I always scout out sells on organic and all-natural meat.  Animals that were fed artificial growth hormones prior to their death – still contain artificial growth hormones in their bodies when they are prepared for human consumption.  If these hormones resulted in bigger animals… wouldn’t they create bigger human beings??  Just a thought.

Garlic chicken is our absolute favorite chicken recipe.  It is a fabulous addition to salads, pizza, and rice bowls.  Enjoy!

 

 Garlic Chicken

1 lb. chicken tenders
1 tsp. garlic powder
1/2 tsp. sweet paprika
1/2 tsp. pepper
2 tablespoons grape seed oil

 

Mix together garlic, paprika, and pepper in a small bowl.  With clean hands, massage the spice combination into the chicken. Heat the grape seed oil on a large oven proof skillet over medium-high heat.  Place the chicken into the skillet and sprinkle any left-over spices on top.  Brown the chicken on both sides, rotating it once, until cooked.

When the chicken is cooled, place on a cutting board and thinly slice.

Cinnamon-Apple Oatmeal

Lazy Saturday Morning Oatmeal

1/3 cup of oats
1/2 cup of soy milk
1 small apple cut into bite sized pieces
big dash of cinnamon
little dashes of ground ginger and nutmeg
2 tsp of dark molasses
1 large scoop of peanut butter
chocolate chips or unsweetened carob chips (my favorite)

Directions:

Heat milk in a saucepan on low heat. Mix in spices, oats, molasses, and apples – cook until tender. Serve with a big scoop of peanut butter and chocolate chips.

 

** chocolate chips with breakfast should not be an every morning indulgence.
